日本のすぐそばの南国の島、台湾はいろいろな食材に恵まれた素晴らしい場所です。

ここには比較的日本人の口に合うおいしい料理がたくさんあります。今では日本でも数々の台湾料理が食べられていますが、果たしてそれは本場の味といえるのでしょうか?もちろん答えはNO!でしょう。なぜなら、さらに日本人の口に合うように多少味付けが変えられているからです。

そこで私は皆さんにより本場の味を楽しんでいただくためにいくつかの簡単に作れる台湾料理のレシピーを載せました。ですが、ただ覚えるだけではなかなか頭に入らないと思われるので、クイズ形式にして楽しみながら覚えてもらうことにしました。ぜひとも挑戦し、レシピーを完全に覚えてみてください。

一品目

中国名で『茶葉蛋(英語名: Tea Eggs)』という料理についてのレシピーです。

材料、作り方の手順、ノートを読んだ後の問いに答えなさい。

 

茶葉蛋とはどんな料理なのか?

A cheap snack food, found all over China. In spite of the name, tea is not the dominant flavor.

 

 材料

 6 eggs
3 tablespoons soy sauce
1 teaspoon salt
1 tablespoon black tea leaves or 1 tea bag
4 pieces star anise
1 small stick cinnamon
1 teaspoon cracked peppercorns (optional)
2 strips dried mandarin peel (optional)

 

手順

  1. Place unshelled eggs in saucepan of cold water – water level should be at least 4 cm higher than eggs. Bring to a boil, and then simmer for 2 minutes.
  2. Remove the eggs. With a knife, tap each egg to slightly crack the shells in two or three places. Return to saucepan.
  3. Add other ingredients and stir. Cover and simmer for 2 hours, adding water as necessary. Drain, serve hot or cold.

Notes
Cook longer for a stronger flavor and a deeper color. Tea eggs are also known as Chinese marbled eggs for the unique marbling effect on the surface of the egg. Sauce can be frozen and reused

二品目

 次は『酸辣湯(英語名:Taiwan Hot and Sour Soup)』という料理についてです。

 作り方のところで(  )になっている箇所に下線の引いてある材料を入れなさい。

 

 

 

 酸辣湯とは?

  This is a hearty, chunky Taiwanese version of the soup that can be found in Chinese restaurants worldwide.

 

 材料(6人前)

 

Ingredients
4 dried shiitake
blackmushrooms
I dried wood ear
120g lean pork, julienne
2 teaspoons cornstarch
300g regular tofu, cut into 1 cm cubes
150g congealed pig's blood, cut into 1 cm cubes
7 cups chicken stock
3 large slices of ginger
1/2 cup carrots, julienne
1/2 cup bamboo shoots, julienne
1/2 cup white rice vinegar
3 tablespoons soy sauce
1 1/2 teaspoons chili sauce
3 1/2 tablespoons cornstarch mixed in a small amount of water
1 egg white
4 spring onions, finely chopped

 

手順

  1. Soak     and     in water until soft about 20 minutes.

  1. Slice pork into very thin strips. Put in a bowl and add the 2 teaspoons of (   ). Mix well and let stand.

  1. Trim the mushrooms and wood ear stems and slice thinly.
  2. Place stock in a large pot and bring to boil, Add mushrooms, wood ear and (    ). Simmer for 10 minutes. Remove (    ).

  1. Add pork, tofu, pig's blood, carrots, and bamboo shoots. Cook for 2 minutes, before adding vinegar, soy sauce, and chili sauce. Cook for further 5 minutes.
  2. Mix in the cornstarch to thicken soup. Turn off heat. Add egg white and stir gently.
  3. Garnish with (   ).

 Notes
this dish involves quite a bit of preparation, but is cooked in less than 20 minutes. Unlike many hot and sour soups, this one does not use pepper, instead relying on a fine balance of vinegar and a chili to achieve the hot and sour effect. Although in Taiwan the soup will always include the pig's blood, you might not fancy it, even if you can get your hands on it – so leave it out. Leftovers taste fine after a few days in the fridge, but do not freeze.

 最後は『炸豆腐(英語名:Deep Fried Tofu with Dipping Sauce』という料理についてです。

 はじめに材料、作り方の手順を読んで問題に挑戦してみてください。

 

 

 

 炸豆腐とは?

  簡単に言えば、油で揚げた豆腐を特製のタレにつけて食べる簡単な料理です。

 

材料(4人前)

Dipping sauce
3 tablespoons soy sauce
1 teaspoon white rice wine vinegar
1 teaspoon white sugar
1/2 teaspoon chili, chopped finely
1 stalk spring onion, chopped
1 clove garlic, minced
Pinch pepper

1 or 2 cakes of firm tofu (quantity is not important), cut into 3cm cubes
5 cups oil

 

手順

  1. Drain tofu.
  2. Mix the liquid dipping sauce ingredients in a bowl, making sure sugar is dissolved.
  3. Add the remaining dipping sauce ingredients and stir.
  4. Heat the oil in a wok or pot to about 180 degrees C.
  5. In manageable portions, fry tofu quickly until golden brown. Drain well.
  6. Serve at once, dipping tofu into the sauce.

Notes:
Like all deep fried foods, this dish will suffer if not served immediately. The tofu also goes well with chili sauce or any sauce you like.
