Dear madam,
I have been though the "Japan thru young eyes" site and I found it really
interesting.
One of my dreams is to come over to Japan and visit it properly,but what I
know about Japan is not much and I don't speak a word of Japanese.I'm
planning to come over next year,but I have many concerns about it,for
example I would love to go all over Japan,but I'm not sure that in small
towns people speak English,
I would love to understand throughly a colture that is so far apart from
mine(I'm Italian):I could sound mean to someone there without even notice
it.
my problems start from small things:I would love to eat food I can't even
order!

What I think would help me,it would be to talk to someone ,maybe around my
age(I'm 22),that could mail me and that I can talk to.
I thought that one of your students could be the person I am looking
for:someone that knows English and that knows the difficulties of a
foreigner that has never been to Japan.

Hi Ms. Watanabe,

I'm an American male, 71 years old. I stayed in Japan, more
exactly; Sendai and later, Yokohama - in 1947. I took over
the Eighth Army Daily Newspaper as editor.

In 1985, I had a little calamity; a massive stroke with a
king-sized case of Aphasia.

In 1999, as part of "Golden Years", I decided to a novel(?)
about Akiko Nakamura, also known as "Kiki. I determined to
call the novel, "Kiki's War!"

Just about about this time, January, 1947; I was stranded at
Ueno Station, waiting for a trsin to take me to Sendai. I
followed the advice of the trainmaster to visit Ueno Park.

I have trouble matching to my visit with your map in my
computer. Definitely, that is the fault of my memories!
(Remember this is 53 years, ago!)

I remember:
1) walking through ONE of the museums; seeing historial
artifacts (a giant bows,arrows AND modern painting of
Japanese scenery on the second floor). That sounds
impossible having History and Art displayed at one museum.
2) stumbled upon a Japanese Garden (with a pond), adjacent to
the same building. I remember sitting on porch (portico),
wondering about the garden; trying the door between the
portico and building, finding it was open.
3) viewing the pagoda(s), mysterious and esoteric!
Remember that was my first view of Japanese arctitecture.
4) blunders my way to the monk(?) of the Buddhist religion who
confided (in broken English), "His Temple was 1,200 years
old"!
5) Somehow, I discovered a street going though the Park,
with small buildings (which looked to me), as stalls to
serve suppliers of souvenirs or refreshments for the
visitors!
6) Did I see a wall, of varying height, around the Park?

ぬかみそ漬けは古くから作られ、江戸時代にはほとんどの
家で作られてたようです。
「ぬかみそ女房」という言葉がありますように、ぬかみそ漬け
の手入れがよく、おいしいぬかみそ漬けを作るのが主婦の
役目でした。
その家代々のぬかみそ床が引き継がれましたが、現代では
都市部ではぬかみそ漬けも市販加工品となっています。

ぬかみそ漬けは、一名「四季漬け」とも呼ばれるくらい一年中
使用できる上、漬け方も簡単です。
また、漬け床は、一度作っておけば、手入れさえすれば何年
でも使用できます。

ぬかみそ漬けは床の良否によって風味が左右されますので、
毎年新しいものを作るよりも、5年、10年と手を入れたものの
方が風味の良い漬け物が出来ます。

北九州の小倉を中心とする地方では、ぬかみそを大切にする
ことで有名です。旧家などでは、何百年と伝わったなれた床を
立派な塗り物の容器に入れて、床の間に飾る風習がありました。

このぬかみそ床は「床漬け」とか、「しみったれ漬け」とか言われて
いますが、お嫁に行くときはこの床を分けてもらうぐらい大切に
していました。

この地方では床の上には上質のぬかを用い、トウガラシ、サンショウ
ダイダイの皮などを入れて風味をつけ、丹念に手入れをします。

このぬか床は料理にも利用されました。よく手入れしたぬかみそを
調味料として鍋にとり、サワラ・サバ・イワシなどの背の青い魚を
入れ、とろ火で気長に煮つめると、特有の生臭い魚臭がとれるので、
そこに少量のしょうゆ・砂糖などで好みに味つけして食べます。

また11月ごろには、頭や腸を除いた新鮮なイワシをぬかみそに
たくさんいれておき、ときどき出して、焼いて骨ごと食べる習慣が
ありました。

「こぬかいわし」って可愛い名の料理ですね。
「小糠雨」とはよくいいますが、情緒溢れる名称です。
どうも有り難うございました。

さていよいよ「ぬか床」の製法です。
人によって作り方はちがいますが、材料の配合割合も
きまっていません。一例を挙げますと次のようです。

一般には重量比で、米ぬか10に対し塩2.5〜3.5、水は
床のたかさによって幅があり、普通のみそぐらいのかたさで
8〜10、やわらかい床で13〜15ぐらいの比率にします。

先ず米ぬかを目の細かいふるいでよくふっておきます。
塩は水に溶かして一度煮立てたあとさましておきます。
漬ける容器にぬかを入れ、さました塩水を加えて手で
しっかりとこね上げます。

容器は金属製のものはさびやすいので、樽やカメ、あるいは
ホーロー引きのものがいいでしょう。

ぬかは炒って用いる場合もあります。(我家ではそのように
しています)炒るとぬかがこうばしくなり、またいたみにくいと
いわれていますが、強く炒ると、ぬかに含まれる酵素の働きが
熱によって失われます。
酵素は床の熟成に役立つものでありますから、炒る場合は
軽く炒るか、また一部に止めておく方がベターです。

また、床を早くなれさせるにはパン・ビール・イースト・コウジ・
酒粕などを少量加えます。古い床を加えてもいいです。

ぬかみそをより味よくするためには、季節によって出回る
サンショウの実・シソの実・新ショウガ・赤トウガラシなどを
こまめに床に入れてゆくといいでしょう。
こうするとよい香りが床に移るばかりでなく、ぬかみそに出る
異臭も消せます。
サンショウの実やシソの花など小さいものは、ガーゼに包んで
漬けます。

ぬかみそは熟成が進みますと酸っぱくなります。この場合、
洗った卵の殻あるいは炭酸カルシュウムを入れると科学反応
で酸味を中和することが出来ます。
またカルシュウムは漬け物に吸収されるので、栄養強化にも
なります。

ぬかはできるだけ新しいものを選んで下さい。古いとぬかに
含まれる脂肪が酸化して風味が落ちます。

できた床はすぐには使えません。はじめのうちは「捨て漬け」と
いって、水分の多い野菜類を漬けて床をなれさせる必要が
あります。
たとえば、ダイコン葉、キャベツ、ハクサイなど漬けて、漬ったら
新しいものととりかえます。

また漬けるたびに床をよくかき混ぜ、すみずみにまで空気を入れる
ようにします。こうすると、日増しに床が発酵してやわらかくなり
なれてきます。
夏で4〜5日、冬で10日くらいで床がなじみ、漬けられるように
なります。

留守中に隣の奥さんに床の手入れを頼まないで下さい。
持ち主の手に着いた酵母菌で熟成中のぬかに他人の菌で
変化を与えてしまうのです。
こういった僅かの条件が、あなたのぬかみそを台無しに
してしまいます。

ヒミコさんが火事でも持ち出したいという主婦の心情が
伺えます。それほど大事なぬかみそ床なのですね。

◎漬け物にまつわることわざ

【なにもナスビの香の物】
ご馳走はなくとも、ナスビの漬け物でも気持ちはあらわせると
いうことです。

【タクアンの重石に茶袋】
タクアンの重石は重いほどよい。茶袋のように軽いものでは
重石として役に立たない。
何の役にも立たないことのたとえに用いられます。

次回は床の手入れです。

さて、
ぬか漬けについてレス無いようですので、先にこの
MLで紹介した記事送ります。
中にはMLのメンバーの方とのやり取りもありますので、
臨場感はあると思います。

少し長くくなりますが、宜しく再編集下さい。

もう既に漬け物経験豊富な熟女の方のレスでお分かりの
ように、男性専科の野郎がぬかみその樽に顔を突っ込んで
かき回しても絵にもなりませんが、一般論でご報告致します。

漬け物は大変種類が多く、それぞれの地方の習慣・産物・
気候などによって漬け方も異なり、多種多様です。
すなわち日本の漬け物は、欧米のチーズに対応するとも
いわれ、長い年月かかってその地方独特の味を出している
ものが多いのはご承知の通りです。
そのため、これらを系統的に分類してしまうことは困難です。

でも、敢えて分類してみますと・・。
◇塩漬け・・一夜漬け・ハクサイ漬け・梅干し・しば漬け・
 スグキ漬けなど。
◇ぬか漬け・・タクアン漬け
◇ぬかみそ漬け・・キュウリ・ナス・カブなど。
◇粕漬け・・奈良漬け・守口漬け・ワサビ漬けなど。
◇酢漬け・・ラッキョウ漬け・ハリハリ漬け・ピクルスなど。
◇コウジ漬け・・べったら漬け・三五八漬けなど。
◇みそ漬け・・コンブのみそ漬け・ゴボウのみそ漬けなど。
◇しょうゆ漬け・・福神漬け・やたら漬けなど。
◇カラシ漬け・・ナスのカラシ漬け・キュウリのカラシ漬けなど。

次ぎに科学的分野から分類してみますと。
◇発酵によるもの・・タクアン漬け・ぬかみそ漬け・塩漬けなど。
◇発酵しないもの・・一夜漬けなどの塩漬け・酢漬け・しょうゆ漬け・
 粕漬け・味醂漬け・みそ漬けなど。

次ぎに貯蔵期間による分類ですが、
◇即席漬け・・早漬けともいいますが、1〜2日のうちに出来るもの。
 半日くらい漬けたものを、一夜漬けといいます。
 風味を出すためにショウガ・みそ・トウガラシ・カラシなど加えます。
◇当座漬け・・2〜3日から2〜3週間で出来るもの。
◇保存漬け・・1〜2ヶ月から5〜6年貯蔵するもので、日を経るほど
 味がよくなります。
この方法で大切な事は、材料に対する塩の割合であります。
塩はある程度以上濃度が高くないと防腐作用が働きません。
その為、保存期間が長いものや、ゆっくり発酵させるものは塩分
濃度を高めることが必要です。

日本各地方の漬け物の特色については、またご報告致します。

きっとDexさまからUPがあると思いますが、私のやり方ですと、

私の娘はアメリカにいるのですがやはり漬物に挑戦してその「漬物の
素」とやらを使って結構美味しかったと言っていましたが、

私も半月ほど滞在(夏)しましたがアメリカの野菜はずうたいばかり
(人間と一緒!)大きくて水っけがなくて美味しくないんです、

以前、スイスにいる太田さんからも問い合わせがありましたが、やはり
糠床を手に入れないといけません、
アメリカにあればいいですがなければ日本から取り寄せるしかないでしょう
ね、

その糠にビールの残りとか水、塩を入れてくず野菜を入れては、取り出し、
入れては取り出し、それで何とか味が馴染むまで一ヶ月はかかります、

後はとに角、最低一日一回はよくかき混ぜること、
混ぜれば混ぜるほど美味しくなります。

その他にニンニク、唐辛子、しょうが、出し昆布、カラシ粉、などを入れると
虫がつきにくく味もよくなります。

私はサンフランシスコのゴールデンゲートブリッジを渡ったすぐのところに住んでいました。私のワンちゃんはサンタクララ生まれでわざわざ迎えに行ったので懐かしく思い起こしております。

さて、ぬかづけですが私も大好きで、最近NHKの料理番組で見た作り方で今度試してみようと思っているところでした。ざっと、メモしたのをご紹介します。

水カップ5
あら塩100グラム
煎りぬか1キロ

大豆カップ1/4
こぶ
和からし大1
青梅
唐辛子
かんきつ類の皮
生姜
にんにく
実さんしょ
さんしょ


水を沸騰させた中に塩を入れとけたら火を止めてぬかを入れてまぜる。(水気が足りないと思うくらいでちょうど)その中に大豆以下のものなんでもいれる。からし、青梅、唐辛子は防腐剤の役目。かんきつ類の皮はいれたら数日でとりだす。他のものはいれっぱなし。はじめの10日は毎日少なくとも一回は混ぜて、室温でねかせる。10日たったら、ためしに何かつけてみる。テレビでは大きなキャベツの葉をいちまい。(たしか、少々塩を振っていたと思います。)ぬかが必要としている水分をキャベツからとるのでこのキャベツは実際には食べられない。

それからが本漬け。漬けるものを洗って水をキッチンペーパーで拭いて手のひらに小1くらいの塩を置いて野菜に軽くこすり付け、ぬかにつける。朝つけたものは夜には食べられる。本漬けになったらぬか床は冷蔵庫で保存して良い。

このレシピで大豆を使うのが面白いと思います。味噌を使うのを聞いたことはありますよね。アメリカでも大豆は健康食スーパーで量り売りしており、手軽に買えるので順子さんも困らないでしょう。

私も早く作りたいと思いつつまだ実行に移せていないので、どなたか試した方の感想がきけたらうれしいです。.

私は日本生まれですが、カナダ生活が28年ですから、ある程度この質問には答えられると自負しています。先ず「外国人」という言葉でヨーロッパ系のコケイジャンを意味されているものとして、お答えします。
食文化の違いと言ってしまえばそれまでですが、私の見る所では日本料理は正しく紹介されない場合が、「嫌い」と言わせる原因になっているようです。
その良い例が「ワサビ」。これを普通の食べ物のように思って口にして、酷い目に合った外国人は少なくはないでしょう。私の友人は、「せっかくの旨い鮨を台無しにする」と言って食べません。殺菌効果があるし、蓄膿症も改善されると言っても、昔負った深手の傷は癒されていないのですね。日本料理を紹介する日本人は、面白がらないで責任ある紹介をして欲しいと思います。
「のり巻き」。戦争後の日系人教会を助けた私の先輩牧師。教会のピクニックでこれが出たので「チョコレート・ケーキだろう」と思って口にしたら、とんでもない味。しかし牧師柄、食べ物の悪口も言えず、捨てることも出来ず、自分では隠してもっていた積もりなのですが、日系人はみんなで、この牧師がそれをどうするか見守っていたとか。翌週の日曜日の教会で、「それであののり巻きはどうしましたか」と聞かれたそうです。
二年前私が当市の姉妹都市提携使節団の通訳として北海道深川市に行った時のことです。ホテルでは、和食と洋食の朝食を選ぶことになっていました。十名ほどの使節団には夫婦者のインド人を除けば、全員が英国ドイツ系カナダ人でした。第一日目はかなりの人数が和食を取りました。そしてそのインド系市会議員である夫に同行した夫人、ジャグデッシさんは、「和食は胃に軽くて、それでいて中華料理のように、またすぐ空腹になるということがない。私も作り方を習って作って見たい」と言う程でした。所が私が食べたものの説明を英語でしたら、その翌朝か
らは、和食を食べる人の数が激減しました。説明も時間をかけて、口が慣れるようにもっていかないとダメなようです。
私は上海生まれの日本人で、戦争で日本へ帰り、味噌汁が飲めなくて辟易したという人を知っています。それに比べて私と東京で会って東京で
結婚した、ドイツ生まれの家内は「茗荷の味噌付け」が大好きです。紹介の仕方の違いでしょう。
その上欧系の人達と私たち日本人では消化酵素が違うので、私たちには
乳製品を消化できない人が多くいるとのことです。欧系の人達にもいないことはないのです。私は牛乳を飲むと下痢します。それ用のエンザイムを買って飲めば大丈夫とのことですが、いまだ実行していません。
体の仕組みは、私は指圧をするので言えるのですが、驚くべき程同じで
す。個々の部分の長さ太さが違うだけ。頭蓋骨の形も違います。でも基本的には変わりません。
北米で一度生活されたら、順次答えが得られるのではないでしょうか。

Hellow, my name is Tokunaga Toshiro, a Japanese man.

I intoroduce one of the Japanese OBAKE stories,
Tono-Monogatari 遠野物語, written by Mr. Yanagida Kunio.
Tono: a town in Iwate Pref. Japan
Monogatari: folk story
Yanagida Kunio: a famous ethnologist, He has been passed away.
This Monogatari introduces more than 100 previous strange
stories in a small village Tono including some OBAKE.
One of the well known OBAKE is Zasikiwarashi.

I suppose you have alreday read this story during your stay
in Japan because this is another famous OBAKE stories
besides KAIDAN written by R.H.
However, I have no information of the documents written in
English now, and inform only some books in Japanese.

タバコに関連して、これは信頼できる人から聞いた話ですが、あのフィルターについて


昔はタバコは吸殻を投げ捨てても、自然に帰っていくものでしたから、そんなに環境
を汚染するものでなかったが、フィルターが付くようになってから、フィルターが朽
ちないので問題になったと言います.

東京のJR各駅で、ホームでの喫煙を禁止したのは、他人への迷惑もあるようですが、
本当の理由は線路に落ちた吸殻の清掃が大変だからと言うものだそうです.

タバコを吸っていないのに論ずる資格はありませんが、
一般常識として。

日本におきますタバコの歴史につきまして、色んな説が
ありますので、此処では省略致します。

◆タバコの煙
タバコの煙は92%が気体で、粒子が8%。
気体の中に含まれる物質に、有害なアセトアルデヒド
(アルコールにも含まれます)やアンモニアなどがあります。

タバコの煙の中には、一酸化炭素が環境基準の2000
〜7000倍、二酸化硫黄が1000倍、窒素酸化物も
2000倍くらいあります。
これらがセキやタンの原因になっている場合も多いとか。

◆タバコは薬になる?
タバコを文明国に導入したのはコロンブスといわれます。
サン・サルバドル島にコロンブスの一行が上陸したとき、
原住民達の間では、タバコは宗教行事や病気の治療に
用いられていたといいます。

◆置きタバコは有害
タバコの煙には、喫煙者が直接肺に吸い込む主流煙と
タバコの先から立ち上る副流煙の2種類があり、主流煙
より副流煙の方に、多くの有害物質が含まれます。
ひっきりなしにタバコを吸う人より、ふかしているだけで、
置きタバコの多い人の方が、周りの空気を汚します。

◆ニコチン
タバコに含まれるココチンは、猛毒で半数致死量7.1mg
(致死量は10mg、両切りタバコのおよそ10本分のキコチン量)。
人間の白血球に作用して、炎症を起こしたり、肺を損傷すると
いわれています。
しかし、タバコの煙を吸っているぶんには、それほど心配は
ないそうです。
ただ、タバコの煙には、呼吸毒の一酸化炭素や発がん物質の
ベンツピレンなど、数々の毒性物質が含まれ、本人だけでなく、
周囲の人にも影響を与えるので要注意。

◆タバコを吸う理由
フロイトの精神分析的考察によれば、人がタバコを吸う主な理由は、
味がいいとか香りがいいからという意識的なものではなく、幼児期に
母親からの授乳を通じて得られた快感が、タバコを口にくわえること
によって無意識のうちに呼び覚まされから、とされます。

◆タバコに必要な空間
タバコを1本吸うと、その煙からは浮遊紛ジンが15mgずつ出てきます。
日本のビル管理法には、空気中の浮遊紛ジン濃度は1平方メートル
あたり、0.5mgまでとなっています。
この管理基準を守るためには、タバコ1本につき、24畳の広さが必要。

◆タバコのニコチンの名の由来
1595年フランスにタバコを紹介したのは、当時リスボン駐在のフランス
大使のジャン・ニコ。
彼はタバコを喫煙のためではなく、フランス皇族の頭痛薬として広めた。
ニコチンの名は、このジャン・ニコのニコからきているという訳です。

◆子どもがタバコを吸うと親が罰せられる
自分の子どもがタバコを吸っているのに、親が止めなかった場合、
20円以上4000円未満の罰金が科せられます。
また、よその子どもでも本人が吸うことが分かっていて売ったものには、
8000円の罰金です。

▲愛煙家にはミルクがおすすめ
アメリカで、ミルクを飲む喫煙者は、飲まない喫煙者に比べて慢性気管支炎
にかかる確率が60%も低いという調査結果が出ています。

これはミルクに含まれているビタミンAが、気管支の粘膜を保護し、強くして
いるせいなのです。

いずれにしても、自分の身体は自分で守りましょう。

Eyes)を読んだ感想

英語と日本語両方とも読ませいていただきました。
英語は、我々にもわかりやすい英語で書かれて
あってとても読みやすかったです。

こうゆう日本での記憶を大事にして下さってることは、
日本人として、とても嬉しくおもいます。
この文章を読んでいると
当時の日本の文章どおりの光景が目に浮かんで来ました。
それには、なつかしさ、そして寂しさを感じました。

僕らの世代は、もうすでに日本が経済大国として成長してから
生まれました。Kenさんの言うとおり、「古い日本」を犠牲にして
日本は発展してきたんだろうと思いました。
毎日、何気なく生活していると忘れてしまいそうなことを
外国の方からあらためて気づかされたような気がします。

Comments:この2つの文章を読んで、なにか切ない気持ちになりました。昔日本で撮ったフイルムを思い出とともに見れるなんて、ステキだと思いましたし、でも、そのフィルムの景色と今の景色は全く違ってきてると思います。もし、思い出をもとに、日本に、生まれ育った場所に帰ってきたとき、淡い思い出が、どこかへ行ってしまうような気がするかも知れません。実際、私も小学校までは本当に山の奥地で育ち、自然に囲まれて、いつも外で走り回っていた幼い頃の記憶があります。でも、この前、その土地を訪れたとき、全く違った風景で、幼い頃よく通っていた駄菓子屋さんがなかったり、家が、きれいになってたり・・・住み良くなったんだとは思いましたが、思いで全部が、どこかへ封じ込まれたような気がして凄く残念でした。私は住みよく、全部を補正してしまうより、ちょっとくずれてたほうが、風情もあるのでは・・・と思います。

はじめて外国の方からみる戦後の日本人を知ることができたと思う。
私たち日本人は占領されたアメリカを嫌な目で見てはいません。
私たち若い者がいってるだけかもしれません。
けど、アジア諸国は占領した日本をいまでもとてもにくんでいます。

I am writing to you for the first time. I read your E-mail,
and I was greatly impressed with the fact that you are active
in so many fields. Today I visited the Home Page of shejapan,
jiyujin.

Well, I know it is proper to send my response to the HP you
mentioned, but I wonder you can do it for me, after you make
some corrections on my response.

The category of seasonings is very extensive, varying from salt
to sugar, vinegar, soy sauce, miso, tomato seasonings, oil, and
spices. And if I try to discuss about them properly, I would be
writing a book.

So for this time sake, I will neither discuss about the history
of soy source, its producing places, nor about the topic on soy
sauce and health.

◎Kinds of Soy Sauce
◆Genuinely brewed soy sauce (soy sauce manufactured only by brewing)
◆New style brewed soy sauce (the one fermented by adding koji and
other ingredients, which are used in the genuine brewing, to amino-
acid etc.)
◆Amino-acid mixed soy sauce (adding synthetically produced amino-acid
liquid to the soy sauce that is manufactured either by genuinely
brewing or new style brewing.
◆Dark soy sauce (most widely used).
◆Light soy sauce (weak soy sauce is its character, as the name
indicates.)
◎◆Tamari soy sauce
While the dark soy sauce is made of soy beans and wheat, tamari soy
sauce is made only of soy beans.
One steams soy beans and adds koji to it, and makes balls mixing it
with salt water, then lets the balls fermented by leaving them for
one year. This process is very similar to the method of making miso.

Since the moromi (unrefined soy) in tamari soy sauce are too hard to
and mix like in the case of soy sauce making. So one places a thin,
long bamboo basket (zaru) into the moromi, and scoops the liquid that
oozes out, and then pours it onto the moromi. (This operation is
repeated.)

After the fermentation process is once completed, the liquid is
extracted from the bottom, which is used as a perfect product.
Usually it undergoes through heating also.

“Tamari soy sauce” was actually an original seasoning that was
used before soy sauce was invented. In ancient days a thin, long
bamboo basket, called Tate, was inserted into miso, and the liquid that was
oozed out into it was used as soy sauce, and this liquid was called
“tamari.”
Also the clear liquid that was taken out from the moromi is also
called “tamari.”

In the areas of Aichi, Mie, and Gifu countries, tamari is used even to this
day. It is slightly darker than ordinary soy sauce, and has distinctive
smell.
It may taste rather sweeter, but it is often used in the Nagoya region for
sashimi
(sliced row fish.)

The one that is extracted from the bottom of the fermentation tank for the
first
time and made as tamari product is called “kibiki-tamari.”

After one extracts the kibiki-tamari for the first time, one adds
salt water to the moromi, and after mixing it well, one leaves it
for another ten days or up to one month.
Then one extracts the liquid again from the bottom. This liquid is
called subiki-tamari.

Or one can mix the kibiki-tamari with salt water, and boil it. The
liquid that is squeezed through a cheese cloth is called niira-tamari.

These tamari have poorer taste, compared to kibiki-tamari.

“Tamari soy sauce” is originated by a Japanese Zen monk, called
Kakushin, who imported method of miso production from China, and
introduced it at Kinzanji (or Keizannji) in A.D. 1254. When he was
wandering about the country from one place to another for his mission
activity, he found that the water in Yuasa of Kishu (Wakayama prefecture)
suited very well to miso production. He also made a seasoning with the
liquid he found at the bottom of the miso making container.

hello,

I just finished looking at your Japanese Ghost stories web page and was so
amazed with how wonderful it was! It truely is one of the best sources for
more information on Japanese Ghost Stories. I was truely impressed and will
return back to it many times.

I was born and raised in Japan. I'm actually half-japanese which is why I am
interested in Japanese Ghost stories. I grew up listening to stories about
the "yuki-onna" and other ghosts and goblins... As of now, I am studying
film production in California and hope to become a director one day. My goal

HSLNで紹介がありましたので、英文添削教室に興味がありアクセスさせて頂きました。

私は、英文和訳は曲りなりにもOKですが、和文英訳は数10年やっていないので、学生時代に戻った気分で拝見しました。

添削教室には例1.しかないようですが、これからあとのUPが楽しみです。
多くの添削個所は日本人の思考をそのまま翻訳しては、不適切であったり、通じないコメントなどあったりして、英訳の難しさを感じました。
最近は日本語もろくろく読み書きできないような学生が多く、企業では新入社員に「読み書き、そろばんから教えなければ使いものにならない」とラジオ番組で嘆いていたのを聞きました.
本当だとしたら、日本はこの先どうなるのかと心配です。杞憂であることを願うしかありません。

On Tamari as Tamari Shoyu or Tamari-ba,
their meaning asked by Nathalie Marcotte.
Dear Nathalie. If you know the verb form of "Tamari", you would understand the common meaning for these phrases. "Tamari Shoyu" is the liquid you would find on top of the Miso barrow. It is so called, because it was leaked out of the Miso, and got "gathered" at one spot.
Ordinary Shoyu is made in a sightly different way, but some people used this liquid in Miso barrow as Shoyu.
"Misu-tamari" means "a pool" or "a puddle", because water got "gathered" at one spot and does not run away anywhere. So "Tamari-ba" means literally "a gathering place", but this time it is used for people, and it often means "a popular place" or "a hangout". Hope this help you.

But I need a little help now: I'm trying to find the exact meaning and origin of the japanese word "tamari". Some dictionaries indicate that it means "gathering place", "collected things" or "arrears". What is the lien between those meanings and the soja sauce ? How do Japanese people usually call the tamari soja sauce, just tamari or tamari soja or tamari shoyou or something else ?

 さきほどテレビを見ました。たいへん短い時間で残念でした。ただ,NHKでの収録などの様子から想像しますと,あの短さでも,取材・撮影時間はかなり長くかかったのではないかと思います。CMの後のURLが,スポンサーのものでSHEのものではなかったのは肩すかしのような,ジョークのような気もしました。

 Thank you for this page. One of the things I miss most about being in Japan is the food. I didn't have a Japanese mother to make food for me, but the local conveni was ok. I loved tuna onigiri. I would eat some everyday.

In the US, our convenience food is not good or healthy. It is almost never freshly prepared. Obesity is a big problem here and I think we could learn a lot from Japan about food, food preparation, and food quality.

Thanks for this website. When I feel homesick for my second home, I'll come and take a look.
